Turmeric & Ginger Healing Soup


Full of so much goodness, antioxidants, and inflammatory fighters, this soup is a delicious must have for the postpartum period. This soup is warm, healing and comfortable whilst also being quite simple to prepare.


The best part about this recipe is you can totally spruce it up and change it to your liking. So goood.

Ingredients

2 teaspoons turmeric powder

1 teaspoon cumin

1 tablespoon fresh grated ginger

2 tablespoons fresh crushed garlic

4 cups of water

4 cups of vegetable stock (salt reduced preferable)

2 carrots

1 celery

1 cup of spinach

1/2 cup fresh basil (as preferred)

1 teaspoon of fenugreek seeds (optional)

Squeeze of lime (as preferred)

Fresh coriander (as preferred)

Salt and pepper to taste

Splash of olive oil


Optional additions: leafy greens, broccoli, lentils, beans, noodles, parsley, chicken, other proteins etc! I added vermicelli noodles to mine for a bit of texture- yum!



Method


1. In a large pot, add carrots, celery, ginger, garlic, turmeric and splash of olive oil over hear for 2-5 minutes until fragrant. 2. Add water, stock and cook on low heat for approximately 20 minutes.

3. Add spinach, basil and simmer for another 15 minutes.

4. If you would like to include noodles or rice or other ingredient, add now and simmer for another 5 minutes.

5. Add a splash of lime and serve with coriander.


This delicious soup can be refrigerated and frozen in batches, perfect to prepare for your postpartum or even better, send the recipe to someone to make it for you.
