INSTRUCTIONS
2 - 3 puff pastry sheet
4 large eggs, beaten
2 rashers bacon, sliced
1 cup tasty cheese
1/2 cup milk
1/2 onion chopped
1 teaspoon olive oil
Optional
Mushrooms
Capsicum
Broccoli
Garlic
Ham
METHOD
Preheat oven to 180C.
Grease mini muffin tin with olive oil.
Cook bacon and onion in oil in frypan.
Using a circle shaped cutter, cut circles into the pastry and place into mini muffin tins. Place tin in the oven for about 15 minutes to bake.
In a jug, mix eggs and milk and whisk together until light and fluffy. Add bacon/onion mix and cheese into mixture.
Add salt and pepper
Put into pastry shells and bake for 15-25 minutes until set.
Remove from oven and let rest in try for about 5 minutes before serving.
To reheat:
Pop in the freezer once cooked and when ready to eat, transfer to a baking sheet and reheat from frozen at 180 degrees for about 10 minutes.
