Mini Quiche Pastries

Not only the perfect snack for toddlers but also the perfect one handed snack for mamas!


Freeze these to defrost when you are in need of a one handed snack in your postpartum, or better yet send this recipe to someone who can make them for you ✨



INSTRUCTIONS


  • 2 - 3 puff pastry sheet

  • 4 large eggs, beaten

  • 2 rashers bacon, sliced

  • 1 cup tasty cheese

  • 1/2 cup milk

  • 1/2 onion chopped

  • 1 teaspoon olive oil

Optional

  • Mushrooms

  • Capsicum

  • Broccoli

  • Garlic

  • Ham


METHOD


  1. Preheat oven to 180C.

  2. Grease mini muffin tin with olive oil.

  3. Cook bacon and onion in oil in frypan.

  4. Using a circle shaped cutter, cut circles into the pastry and place into mini muffin tins. Place tin in the oven for about 15 minutes to bake.

  5. In a jug, mix eggs and milk and whisk together until light and fluffy. Add bacon/onion mix and cheese into mixture.

  6. Add salt and pepper

  7. Put into pastry shells and bake for 15-25 minutes until set.

  8. Remove from oven and let rest in try for about 5 minutes before serving.



To reheat:

  • Pop in the freezer once cooked and when ready to eat, transfer to a baking sheet and reheat from frozen at 180 degrees for about 10 minutes.
