Apple, onion, fennel, garlic & pork all wrapped up in puff pastry for the perfect “sausage” rolllll. Um delish. 🤤
These were one of my absolute favourite go to meals postpartum, not only are they totally delicious & nutritious but they also can be eaten with one hand which we all know is the perfect meal when you are snuggling a new baby all day long.
I am never one to actually measure my ingredients rather just throw it in and see what works (ha) but I have written down what I usually do and you can totally adapt the recipe to include what you like!
INGREDIENTS
500g pork mince
2–3 cloves garlic
2 apples
1 onion
2 tsp fennel seeds
1/4 cup bread crumbs
Splash of Apple Cider
Thyme
Salt & pepper
Sesame seeds
Chia seeds
Chilli flakes (optional)
Butter / Ghee
1 egg
Frozen puff pastry
METHOD
Preheat oven to 200C
Combine & cook apple, onion & garlic on stove with butter/ghee
In a seperate bowl, combine pork, apple mix, thyme, apple cider, bread crumbs, fennel seeds, salt & pepper and chilli
Prepare puff pastry and place pork mix along oneside, wrap up and brush with egg.
Sprinkle some thyme, sesame seeds & chia seeds over the top of the rolled pastry
Cut into smaller rectangles & place in oven until cooked through and brown (approx 15-20 mins)
Serve with tomato chutney
