Homemade Chorizo Paella

Paella is such a warming, fragrant meal, it is no wonder that it is such a popular Spanish dish. I have been wanting to try making homemade paella for some time after seeing it made fresh at markets, and this was just perfect.






INGREDIENTS


2 x chorizo sausage

250 grams chicken breast

1 capsicum

1 cup frozen peas

1 brown onion

2 garlic cloves

2 tsp tumeric

2 tsp paprika

2 1/2 tsp cumin

1/2 cup spinach

2 cups rice

400g can chopped tomatoes 2 cups chicken broth or stock

1/4 cup parsley leaves

Salt and pepper to taste

Limes or lemons to taste


METHOD

  1. Heat oil in large frypan and add chorizo until browned then remove to a plate to cut into 1cm  thick slices.

  2. Add chicken to frypan and cook completely.

  3. Combine chicken and chorizo in frypan and add onion, capsicum, garlic, spinach to cook.

  4. Add all spices to the frypan including turmeric, cumin, paprika and mix.

  5. Add tomatoes, stock/broth, peas and rice to the frypan and continue to stir.

  6. Simmer on low heat continuing to stir until rice is tender. Continue to stir so that the rice doesn’t get stuck to the bottom of the frypan.

  7. Sprinkle with salt, pepper, limes/lemon and parsley to taste

  8. Enjoy!
