Buckwheat Banana Bread

  • 4 ripe bananas mashed

  • 2 large eggs

  • 1 tsp vanilla essence

  • 2 tbsp olive oil

  • 1/2 cup yoghurt

  • 1 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 2tsp baking powder

  • 1 cup buckwheat flour

  • 1/2 cup almond meal

  • 1/4 cup coconut sugar (or brown sugar)

  • Pinch of salt


METHOD


Instructions


  1. Preheat oven to 180*C and grease a loaf pan lightly and line with baking paper.

  2. In a large bowl, combine al the dry ingredients (cinnamon, nutmeg, baking powder, buckwheat flour, almond meal, sugar and salt.

  3. Combine wet ingredients into the dry ingredients bowl and stir well.

  4. Transfer batter to the prepared loaf pan. Add oats to the top of the batter in the loaf pan.

  5. Bake for approx 55 minutes until the bread is golden or until a toothpick inserted into the center comes out clean.

  6. Cool before slicing. Enjoy!
